Comfy Chicken Pasta Salad
Ingredients
1 lb. uncooked penne pasta
3 Skinless/Boneless Chicken Breasts, trimmed
salt & pepper
1 pint grape tomatoes<br.>, each halved
1 green pepper, thinly sliced
2/3 cup freshly shredded parmeasean cheese
One recipe Balsamic Vinaigrette Dressing
Balsamic Vinaigrette Dressing:
1 garlic clove, peeled
2-3 pinches kosher salt
½ cup balsamic vinegar
1 shallot, minced
1 teaspoon spicy brown mustard
Pepper to taste
1 cup extra virgin olive oil
Description
It can be served warm or cold, which makes it a perfect dish to give away for family occasions and when it can be nibbled-at from the fridge for days.

Procedure
Using a food processor, combine Balsamic Vinegrette Dressing ingedients together until smooth.
Cook pasta according to package directions. Sprinkle salt and pepper over chicken and place in broiler for approximately 7 mintutes per side or until meat thermometer reads 180-degrees.
